Turismo. 178p.http://repositorio.uotavalo.edu.ec/handle/52000/72The project to be executed, called: "Revaluation of the traditional gastronomy of the Canton Otavalo", has as main objective encourage tourism through gastronomy, involving various sectors, including the different districts of canton and entrepreneurs dedicated to gastronomy, includes aspects that will revalue the traditional gastronomy of Otavalo, contributing to the gastronomic tourism in the city. This is captured a focal market offering traditional dishes that have gradually been elaborate, causing the loss of its gastronomic historical value. To the satisfaction of the tourist that attends Otavalo, has been the need to create new alternatives of visit through gastronomy where allowed to taste and interact in the process of preparation of the traditional dishes that has the city. In the development of the proposed activities are proposed as the training plan for the gastronomic sector organized the city of Otavalo, the creation of a gastronomic guide, a tourist route and a gastronomic fair, which were carried out in the urban area of Otavalo between the parishes of San Luis and El Jordán possessing native cuisine of great historical value. This project will be achieved that tourists find a destination in which to feel satisfied and receive a quality service.El proyecto a ejecutarse, denominado: “Revalorización de la gastronomía tradicional del Cantón Otavalo”, tiene como objetivo principal incentivar al turismo por medio de la gastronomía, involucrando a varios sectores, entre ellos, los diferentes barrios del cantón y microempresarios dedicados a la gastronomía, comprende aspectos que permitirán revalorizar la gastronomía tradicional de Otavalo, contribuyendo al turismo gastronómico en la ciudad. Con ello se capta un mercado focal ofertando los platos tradicionales que poco a poco se han dejado de elaborar, ocasionando la pérdida de su valor histórico gastronómico. Para satisfacción del turista que a concurre Otavalo, se ha visto la necesidad de crear nuevas alternativas de visita a través de la gastronomía donde le permita degustar e interactuar en el proceso de elaboración de los platos tradicionales que posee la ciudad. En el desarrollo de la propuesta se proponen actividades como el plan de capacitación para el sector gastronómico organizado de la ciudad de Otavalo, la creación de una guía gastronómica, una ruta turística y una feria gastronómica, las cuales se realizaron en la zona urbana de Otavalo comprendidas entre las parroquias de San Luis y El Jordán que poseen gastronomía autóctona de gran valor histórico.
