Resumen
En el entorno actual, marcado por una elevada competencia y una dinámica de consumo en constante evolución, la sostenibilidad de las empresas, en particular en el sector de la restauración, depende en gran medida de la eficiencia operativa y una gestión contable eficaz. Esto es especialmente cierto en el caso de los establecimientos de comida rápida, donde existe una demanda constante de servicio al cliente y una rápida rotación de productos. Por consiguiente, es crucial utilizar herramientas contables que faciliten un control riguroso de costes, la optimización de recursos y una rápida respuesta a las demandas del mercado. En este sentido, la implementación de un sistema contable con enfoque en costos se convierte en un componente fundamental para la gestión eficiente de los recursos dentro del sector gastronómico, ya que permite identificar con precisión los insumos utilizados en cada fase operativa, reducir pérdidas por desperdicio, mejorar la organización interna de los procesos y generar información confiable que sustente una administración más efectiva; esta integración no solo favorece el control de las actividades diarias, sino que también contribuye directamente al fortalecimiento de la productividad, la optimización del rendimiento y la sostenibilidad del negocio frente a los constantes desafíos del mercado. Ante esta situación, el restaurante “Salchi’s Inka Fast Food”, ubicado en Otavalo representa un emprendimiento familiar que ha mantenido su operatividad mediante métodos empíricos de registro financiero, frente al crecimiento del sector y al entorno competitivo actual, se vuelve necesario un sistema contable estructurado que fortalezca 2 el control de costos, mejorar la productividad, optimizar la gestión de recursos y generar información financiera confiable para la toma de decisiones eficiente.

In this regard, implementing a cost-focused accounting system becomes a fundamental component for efficient resource management within the food service industry. It allows for the precise identification of inputs used at each operational stage, reduces losses due to waste, improves the internal organization of processes, and generates reliable information to support more effective management. This integration not only facilitates control of daily activities but also directly contributes to strengthening productivity, optimizing performance, and ensuring business sustainability in the face of constant market challenges. Given this situation, the restaurant “Salchi’s Inka Fast Food”, located in Otavalo, represents a family business that has maintained its operation through empirical methods of financial recording. Faced with the growth of the sector and the current competitive environment, a structured accounting system becomes necessary to strengthen cost control, improve productivity, optimize resource management, and generate reliable financial information for efficient decision-making.
